The story behind the bakery that became a New York institution.

The Levain Bakery story starts with two friends, time at a swimming pool, and a mutual love for baking. Pam Weekes and Connie McDonald first supplied bread to New York City restaurants, then opened a small bread shop on West 74th Street. They chose Levain Bakery as the name, drawing on the French word for leavened bread.

By 1995, the team was handcrafting every loaf, baguette, and roll. During triathlon training, Pam and Connie baked a substantial chocolate chip walnut cookie for energy. Customers quickly embraced the original batch, helping the cookie become a New York icon.

Thirty years on, the bakery still follows that same principle: start with quality ingredients, bake with care, and offer generous cookies and gifts that bring some brightness to the day.

We’ve always been incredibly grateful for the support of the communities we’re a part of, and we strive to reciprocate that support in ways big and small. On opening day, our new bakeries donate all proceeds to a local charity organization, and at the end of every day thereafter, we donate all unsold baked goods. It brings us great pride to think of all the people who’ve been treated to a fresh cookie, a delicious bread roll, or a flavorful muffin in the midst of a challenging day.
